Only Mom Can Improve on Perfection - Mom's Homemade Maple Syrup

Proof that you really can improve on any recipe...

This is my Mom's absolutely amazing maple syrup recipe. You'll never go back to Aunt Jemima's after you try this. In fact if you look on the ingredients of most pancake syrup you'll notice that maple is not even an ingredient!!! Don't believe me, go check your fridge. It's the biggest scam. So here's a real recipe, real simple, using real maple flavor and several basic ingredients you already have around the house.

You won't find this recipe on any other websites. You'll find hundreds of pancake recipes out there. But after you put so much love into your pancakes, you should also take the time to make a quality topping.

If you have fresh tapped maple syrup I applaud you. That's awesome, with fresh sliced strawberries on top. It's the perfect topping.

I absolutely adore pancakes and waffels under a mountain of cantaloupe. You may not have considered this food paring before, but the flavors go wonderfully together, and if you have a ripe cantaloupe you won't need any added sugars or syrups.

This maple syrup from scratch recipe will top any gourmet topping out there, and for pennies on the dollar. One 2 oz (59ml) bottle of maple flavoring makes 24 pints (12 litres)! That lasts me a couple of years!!!

Pour 1 cup water into a thick bottomed pot. Bring to a boil. Add 2 cups white sugar and 1/4 cup brown sugar. Add 1/2 tsp of Mapleine Maple flavoring and 1/4 tsp vanilla. Stir. Makes about 2.5 cups.

A little goes a long way.
